There were 2 and 4V carbs available on all 330s, but your VIN number says you have a V8, not which one.
If you use the stock 66-67 4V pieces, no one will know it was changed.

"Numbers matching" and "more power" are very compatible in any normal street application.

Yes. The actual power increases do not come from exterior bolt ons. In many cases, headers would be the exception.
How you would go about it would depend how much power you want, how you will use it, how much fuel mileage/comfort/reliability you are willing to give up, and how much you want to spend to get it.
