FWIW: I read on ROP that you should drive it for a couple of weeks and it will settle to the springs designed ride height.
Springs sag over the years and if Hotchkis is using the factory height as a reference, I would think there is the possibility their "lowering springs" would raise a 25 year old car.
If by shave, you mean cut the coils, I think you would have been way ahead by doing just that in the first place. Doing so would have increased your spring rates slightly, nothing more or less.
Your ride quality is dictated by your shocks.
I would be quick to disagree with this post if I sold springs.
